In Bari, the capital, whitewashed walls betray Greek influence. Explore the city's quaint, cobbled streets and smell the freshly-washed linen billowing in the breeze on balconies above you. The stone pavements beneath your feet are hot to the touch; the locals insist you try their esteemed cucina povera.

Visit Restaurant Grotta, not too far from Bari, to dine as close to the sea as nature permits.

Gargano is a region of Puglia beloved of our head chef, Roberta, and for obvious reasons.

Bari, the capital of Puglia, is rustic and full of charm.

Puglia's second city, Foggia, offers blue skies, the warmest of welcomes and almost too much to eat.

Polignano a Mare is known for its unspoiled, white-pebble beaches and rustic, cliffside dwellings like these.

The tiny town of Alberobello is famous for its unique ''triulli'', or whitewashed stone huts with conical roofs.

A National Marine Park was established around this town, Porto Cesareo, to protect its exquisite beauty.

Brindisi, a historical city of Puglia, with links to Greece, is full of colourful charm.

Many Pugliese kitchens feature this ancient style decor & fit.

Our very own head chef, Roberta (pictured on the left as a little girl) grew up in Puglia, and misses it every day.

In a Pugliese caseificio (dairy), fresh burrata - the jewel of Italian cheeses - is made.

Orecchiette, Puglia's most famous pasta shape, are made exclusively by hand, and with great love.

In Puglia's vineyards, fantastic wines such as Primitivo are made and shipped across Italy and beyond.

Take a stroll through the streets of Bari or Foggia and meet the locals, full of rustic warmth and character.

This olive tree has been decorated, belying its material significance: Puglia produces some 40% of Italian olive oil.

Trulli, ancient huts such as this one, are totally unique to Puglia.

Focaccia may be associated with Liguria, but the Pugliese counterpart, focaccia barese, uses potatoes.

Taralli are a bread-based snack, quintessentially Puglian, and eaten whenever a need to feed presents.

The street markets of Bari and Foggia offer a kaleidoscope of fresh vegetables to enjoy, including exotic specimens.

Burrata, literally 'buttered' in Italian, is a soft and decadent Pugliese cheese often served with olive oil.

Cime di Rapa are a classic (and important) Pugliese crop, practically unknown outside of the region.

Orecchiette, Puglia's famous pasta, are made simply with flour and water, by hand.

Primitivo, along with several other grapes, is grown throughout Puglia (and adored by our head chef Roberta).

Pucce Salentine are a type of sandwich from Salento, made from pizza dough.
