Fresh tortellini should be cooked for approximately 2 minutes, whilst tortelloni should be cooked for 3-4 minutes until all pieces have floated to the surface. If the filled pasta begins to rupture and the contents spill into the pasta water, you’ll know you’ve overcooked it.
