Did you spot us on your TV screens recently? Our latest TV appearance saw our very own Chef Roberta and Co-Founder Finn helping Gordon Ramsay to judge a fierce pasta showdown in the semi-final of Gordon Ramsay’s Future Food Stars (BBC, 12th May 2022, 9pm).
After some careful deliberation, Gordon selected Leah and Steph's seafood-stuffed ravioli as the winning pasta recipe. Now, for a very limited time only, we've put the winning dish on our menu – so that you can try it for yourself.
Rockpool Ravioli with Crab, 'Coral' Crisp, Samphire & Pea Purée
What's in the dish?
The striking colour of these ravioli comes from the jet-black squid ink that’s been incorporated into the pasta dough. The squid ink might look dramatic, but the flavour it brings is altogether more understated; a subtle saltiness that merely hints of the sea.
The ravioli are filled with a delicate combination of sweet crab meat and creamy mascarpone, which is lifted by a bright burst of lemon. These refined pasta parcels are paired with a smooth pea purée, then scattered with samphire – an ingredient that the Italians call the ‘asparagus of the sea'. For a final flourish, the dish is finished with a garnish of coral-inspired parmesan crisps.
