Malloreddus, translated as ‘little gnocchi’, and hailing from the Italian island of Sardinia, is a unique pasta made most often with semolina and a dash of saffron which gives these little dumplings their yellowy hue. Malloreddus, also known as ‘Gnochetti Sardi’, are uniquely ridged, owed to the ridged shape of the Malloreddus boards used to create each dumpling. Using this tool enables the pasta to perfectly soak up and capture the thicker, denser sauces with which this pasta is most often paired, the most traditional being ‘Malloreddus alla Campidanese’ a dish in which a rich and hearty sausage ragù is perfectly nestled in each pasta groove.
