Amarone della Valpolicella
Amarone della Valpolicella is a full-bodied, dry red blend coming from the northern region of Veneto. The Corvina, Molinara, Corvinone and Rondinella grape varietals are usually used, with Corvina making up the greatest percentage. The grapes are partially dry after being picked but before being pressed. This increases the concentration of sugar and flavour in the grapes. The higher sugar content leads to higher alcohol wines that have a ripe and almost raisin-like quality. This style of winemaking was developed in this region as the growing conditions limited the characteristics present in the final wine. Reds from this region tended to be light-bodied. The added step of drying out the grapes allows for a higher concentration of flavour which leads to a more robust wine.

Amarone della Valpolicella tends to be medium-bodied with low tannins and moderate acidity. This combination pairs well with aged cheeses. Taleggio, aged for 40 days, is aromatic with a fruity sharpness in flavour. Amarone della Valpolicella will stand up to this cheese - both in flavour and aroma - without overwhelming any of the more subtle notes in the cheese and your pasta dish. In addition, Amarone della Valpolicella has a complex palate with notes of cherry, spices, such as cinnamon and cracked pepper, chocolate and almond. These flavours will meld with the sharp fruitiness of Taleggio, making it a natural pairing.
