Funghi are adored by Italians. Indeed, as wild mushroom season descends in the hills and forests of il bel paese, Italians from all walks of life, children and adults alike, can be found searching for wild mushrooms. Above all other, for the famous porcini variety, distinguished among funghi by its exquisite, woody flavours and exceptional aroma. It is these wild mushrooms - so special and oddly beautiful - that we, in this limited edition pasta masterclass, celebrate.
Upon arrival, you'll enjoy a complimentary glass of prosecco superiore from the Italian region of Veneto before Roberta d'Elia, Head Pastaia at Pasta Evangelists, gives an introduction to the world of Italian mushrooms (including porcini, its crowning jewel). After that, you'll learn to prepare two types of pasta from scratch: first, beautiful, thick pappardelle from Tuscany, often served ai funghi, with a wonderful sauce a made from Italian mushrooms and herbs like timo (thyme) and rosmarino (rosemary). Once you've created your very own fresh pappardelle, you'll learn create a pasta filling using porcini mushrooms. Roberta will then guide you through the process of making ravioli, and sealing each raviolo with the special porcini filling, ready to be taken home to devour.
You'll come away from this limited edition masterclass with a wider understanding, and knowledge of, the world of Italian mushrooms, and how they can be used in gastronomy. You'll also leave with the pasta you've made, with guidance from Roberta on how you can cook it (in a matter of minutes) at home.
