Wholemeal Rustichelle with Kale Pesto, Pisellini e Spinaci (vegetarian)
As ever with such an expressive language, there’s a clue in the name of this dish, as the wholemeal ‘rustichelle’ provide a rough texture and deeper flavour to back up our inventive kale pesto.
The crushed kale adds some hearty freshness, complimenting the mild crunch of the pine nuts and zesty extra virgin olive oil in the pesto. Peas and spinach add to the glorious springtime greenery.
