Designed for enthusiastic vegan home cooks, this masterclass will teach you how to master the basics of "pasta bianca" (egg-free pasta), where only flour and water is used, in the authentic Italian tradition.
Although the rising popularity of vegan dishes may appear to be a modern phenomenon, vegan pasta has actually existed in Italy for centuries. Our head sfogline will teach you how to make trofie, a short, twisted pasta from Liguria in the north of Italy. It is believed the name trofie derives from the Ligurian word strufuggia, meaning “to rub.” This name can be attributed to the process of rubbing the dough against a wooden board to create the distinctive twirls of this shape. Commonly served with the Ligurian classic, pesto alla genovese, Roberta will show you how to create this traditional pairing using only the finest plant-based ingredients.

How it works: You will require access to Zoom video calling and a webcam. The day before the event you will be sent a Zoom link via email. If you have not received your Zoom link, please contact events@pastaevangelists.com.
Roberta will send out the recipe 48hrs before the class date. Below you can find all the ingredients that will be needed.
-400g semola di grano duro (included in the pasta making kit)
-180ml warm water
-100g fresh basil
-1 garlic clove
- handful of Pine Nuts
- extra virgin olive oil
- salt
