Summer peas are commonplace in both British and Italian cuisine for good reason. These small vegetables, known as piselli in Italian, are packed with goodness and have a wonderfully fresh flavour which shines through in this pairing with our delicately sweet shallots. These delicious tortelloni pay homage to the humble kitchen garden, evoking balmy summer evenings spent relaxing in one's giardino.
We serve these fresh parcels of pasta with a glug of garlic oil, infused with chilli. The garlic adds an earthy depth to the dish, whilst the chilli - a nod to the gardens of Italy’s southern regions - offers a fiery kick. We finish this dish with a sprinkling of lemon pangrattato, a crunchy, zesty garnish that adds a burst of fragrance to every bite. Be spirited away to il bel paese by these delightful ravioli.

- Bring a large saucepan of water to the boil. Salt the water (around ½tbsp per litre).
- Cook the pasta in the boiling water for around 3 minutes.
- When the pasta has finished cooking, drain and plate up.
- Drizzle over the oil and sprinkle over the pangrattato.
- Enjoy immediately. Buon appetito!
