Designed for the enthusiastic vegan cook, this masterclass will teach you how to master the basics of "pasta bianca" (egg-free pasta), where only flour and water is used, in the authentic Italian tradition. Included in this class is a bespoke pasta making kit, with all the necessary equipment required for you to create handmade pasta at home.
In this masterclass, our head sfogline will teach you how to make vegan gnocchi all'ortolana. The term gnocchi is a colloquialism for dumpling, roughly translating to ‘lump’ in English - whilst this unflattering moniker may be representative of the pasta’s rather humble shape, it in no way captures the smooth and moreish dumpling, adored by Italians and international diners alike. ortolona literally translates to 'greengrocers' which reflects the abundance of fresh vegetables used to create this rustic sauce.

How it works: You will require access to Zoom video calling and a webcam. The day before the event you will be sent a Zoom link via email. If you have not received your Zoom link, please contact events@pastaevangelists.com.
Roberta will send out the recipe 48hrs before the class date. Below you can find all the ingredients that will be needed.
-500g boiled potatoes
-150g of "00" Flour
-1 courgette
-1 eggplant
-1 red pepper
- extra virgin olive oil
- fresh herbs, Roberta recommends basil and thyme
- salt and pepper
