Tortelloni 'Tricolore' with Tomato, Mozzarella & Basil with Sage Butter & Parmesan

Tortelloni originate from Modena, a city in the Emilia-Romagna region of Italy. The exact origin of the shape is widely disputed, but one theory is tortelloni were meant to replicate the shape of a turtle shell, which is famously displayed throughout the 17th century architecture of Modena.

This week's tortelloni are filled with beautiful roasted tomatoes, grown in the fertile banks of Mount Vesuvius, as well as premium mozzarella from Campania & fresh basil, seem to represent Italy. The beautiful dough of the tortelloni is infused with tomato, giving it a blushing red hue. Served with a delicate sage butter and topped with Parmigiano cheese, this is Italia on a plate - buon appetito.
