Ah, Sardinia … home to the Costa Smeralda, in all its breathtaking island beauty. But, most importantly – at least to us – Sardinia means top-quality fresh produce and gorgeous coastal wines. Good food, basically. And a lot of it!
We'd like to invite you to a enjoy a virtual Taste of Sardinia, a digital pasta masterclass intimately hosted by Roberta from her own kitchen in Berkshire. You’ll start by discovering more about Sardinia and its regional traditions from Roberta – who is Italian – and what it means to her. You'll learn how to make two classic pasta of the region: malloreddus and lorighittas, You will then learn how to make a classic Sardinian sausage ragu.
2 large eggs + 200g white flour OR 200g semolina + 80ml water (enough to serve 2)
500 g sausage (pork)
1 tsp fennel seeds
1/2 onion, chopped
2 garlic cloves, sliced
400g of tinned Datterini tomatoes
1 glass of dry white wine (but if you want you can also use it red)
Extra virgin olive oil
If you cannot get the ingredients to make the sauce, just let Roberta know what you have sitting in your fridge/pantry and she will guide you through an alternative using what you have available.
