Celebrate the beautiful island of Sardegna with our taste of Sardegna masterclass! you’ll learn to craft a classic dish from the region, ravioli galluresi, under the guidance of our skilled pastaio (pasta maker), Chef Roberta.
Gallura a region in north-eastern Sardinia is renowned for its citrus fruits. This recipe calls for the zest of both lemons and oranges - as these contain all the essential oil of the fruit, which will add their pure flavours to the filling without watering it down! Alongside, the ravioli you will also prepare a delicate parsley oil. Sardegna is claimed to be the original home of the herb before being widely cultivated across the globe. Celebrate the true tastes of Sardegna in this exclusive masterclass.
What's included in this class?
- A very special regional masterclass where you will learn to make ravioli galuresi with parsley oil shapes from the region with our Head Chef Roberta
- Learn the techniques for making fresh pasta at home by hand, no special tools or machines required

Ingredients:
For the dough:
-300g semola di grano duro (durum flour)
-150ml warm water
-1 tablespoon of extra-virgin olive oil
For the filling
-250g Ricotta
-1 egg
-parsley
-1 teaspoon of sugar
-lemon zest
How it works: You will require access to Zoom video calling and a webcam. The day before the event you will be sent a Zoom link via email. If you have not received your Zoom link, please contact events@pastaevangelists.com.
