This masterclass will be bought to you live from Italy where our very own Roman native, and pasta artisan Livia, will welcome you into her home (virtually) for a truly authentic Italian pasta experience.
In this masterclass, you will refine the skills essential to creating a traditional Tonnarelli Amatriciana. Tonnarelli is the Roman name for the pasta you may have heard by its more popular Abruzzese name, spaghetti alla chitarra. Alongside, this Livia will guide you on how to make the accompanying ‘fiery’ Amatriciana sauce. Despite, often being thought of as a classic Roman dish, the sauce originally hails from the small nearby town of Amatrice dating back to the 18th Century. However, over time the dish because so ubiquitous and famous throughout the capital, the Romans claimed it as their own.

- 300g "00" flour
- 3 large egg
- 70g pecorino
- 50g parmesan
- 100g guanciale or unsmoked pancetta
- 300g tomatoes
Tools: fork, rolling pin, smooth blade pasta wheel, smooth blade knife
