Ah, Puglia … the fertile red land, home to the millions of groves of olive trees, sparkling coastline and some of the most beautiful fresh vegetables in Italy.
We'd like to invite you to a enjoy a virtual Taste of Puglia, a digital pasta masterclass intimately hosted by our chef Roberta from her kitchen in Berkshire. You’ll start by discovering more about Puglia and its regional traditions from Roberta – who is from Puglia – and what it was like growing up there. You'll learn how to make pasta bianche (white pasta, meaning pasta without egg) and two classic shapes of the region: orecchiette and cavatelli, You will then learn how to make a classic Apuglian broccoli sauce for a beautiful summer pasta salad.
- 100g of semola (or plain white flour if you cannot get semola)
- 40ml of warm water
For the broccoli sauce:
- 500g broccoli
- Extra virgin olive oil (about 100ml)
- ¼ cup pine nuts
- ¼ cup almonds
- 40 grams of pecorino cheese
- A handful of fresh basil leaves
- Parmigiano Reggiano or other hard cheese (optional)
- A rolling pin (if you don’t have one, a bottle of wine would make a very authentic substitute!)

If you cannot get the ingredients to make the sauce, just let Roberta know what you have sitting in your fridge/pantry and she will guide you through an alternative using what you have available.

Please note that, in order to preserve the intimacy of the event, we can welcome 1 person per ticket purchased to the digital event. We will have a maximum of 10 guests per digital event.
