In this authentic masterclass, brought you live from an Italian Kitchen, our pastaia Livia will teach you how to master the art of pasta fresca from your own home!
Tajarin is the regional name for the more commonly known Taglioni. However, what makes Tajarin so special, is the abundance of egg yolks used in the dough. This decadent pasta is representative of its homeland, the beautiful Langhe region in southern Piedmont. Known famously for its Barolo wines, Barbaresco, and the finest white truffles the dishes of the region follow the moto that simplicity is best- allowing the full flavors to shine. To really showcase this indulgent pasta, Livia will teach you how to pair it with a light brown butter sauce, delicately infused with sage.

-200g "00" flour
- 6 egg yolks
-50g unsalted butter
-1 bunch of fresh sage
Tools: Rolling-pin, wooden-board, flat-sharp knife
