Ah, Ligura… home to beautiful fishing villages, stylish Portofino and the port city of Genova, where our founder Alessandro grew up making pasta with his nonna.
We'd like to invite you to enjoy a virtual Taste of Puglia, a digital pasta masterclass intimately hosted by our chef Roberta from her own kitchen in Berkshire. You’ll start by discovering more about Liguria and its regional traditions from Roberta – who is Italian – and what it means to her. You'll learn how to make the classic pasta of the region: trofie, an egg-free pasta that is typically enjoyed with Pesto Alla Genovese, which you will also learn to make.
- 100g of semola (or plain white flour) + warm water (about 40ml)
For the pesto sauce:
- A bunch of fresh basil
- Extra virgin olive oil
- ¼ cup pine nuts
- Parmigiano Reggiano or other hard cheese (optional)
- 1 clove garlic (optional)
- A rolling pin (if you don’t have one, a bottle of wine would make a very authentic substitute!)
- Knife & Fork
- Cling film
- Pestle & Mortar
If you cannot get the ingredients to make the sauce, just let Roberta know what you have sitting in your fridge/pantry and she will guide you through an alternative Puglian sauce using what you have available.
