In this authentic masterclass, live from an Italian kitchen, our pastia Livia will teach you all the skills required to master pasta fresca at home. You will focus on a relatively unknown dish originating from the Emilia-Romagna region, tortellini bugiardi.
Tortellini bugiardi translates literally to "lying tortellini". Typically tortellini come filled, yet this variety is empty - a testament to the creativity of poor households, where only eggs and flour could be found in the pantry. The meat fillings were saved for special occasions. This unique pasta is traditionally made in the foothills nestled between Modena and Bologna, and is often coupled with a light shallot ragù.

-200g "00" flour
-2 medium eggs
-2 shallots
-1 carrot
-1 stick of celery
- 400gs tomato sauce, homemade or shop-bought is fine
Tools: Pasta cutting wheel, rolling-pin, wooden board, fork
