This masterclass will be bought to you live from Italy where our native pasta artisan Livia, will welcome you into her home (virtually) for a truly authentic Italian pasta experience.
In this masterclass, you will learn how to make scialatielli alla sorrentina. Scialatielli is a short, thick pasta with a rectangular cross-section and an almost straight but slightly irregular and curvy shape. It is typical of modern Campanian cuisine, having originated on the Amalfi coast as a chef's specialty. Made from a "special" south-Italian dough that is completely unique to the Campania region, it includes the unusual addition of basil leaves and milk! Alongside this unique pasta, you will prepare a traditional tomato and buffalo mozzarella sauce, alla sorrentina.

180g "00" flour
20g semola flour
1 egg
160ml milk
10g of fresh basil leaves
grated parmesan cheese
1 jar (400g) of unpeeled tomatoes
100g ball of buffalo-mozzarella
Tools: fork, rolling pin, smooth blade pasta wheel, smooth blade knife
