Tagliolini with Prawns & Pomodori Ciliegini
This dish is as familiar as it is simple – and for that reason so often a staple of Sicilian cuisine as the key ingredients are so fresh and ready to hand.
Vibrant in colour and with a deep, sweet taste, Sicilian pomodori ciliegini (cherry tomatoes) pair up perfectly with slightly salty seafood, with the prawns also giving a meatier taste to a light, uncomplicated sauce.
And what better to mingle with the oils and juices of the sauce and chunks of fresh tomato than the long strands of tagliolini? All that’s left is to pray for some Sicilian-style sunshine…
