Pumpkin Lasagne with Sage, Almonds and Pecorino

Great Italian food relies on fantastic, fresh ingredients, so Italian chefs are very particular when it comes to sourcing ingredients.  Fortunately pumpkins are one of the few vegetables that are currently in season in the UK: we are using Crown Prince pumpkins, noted for their steel-blue skins and dense, sweet and nutty flesh.

Although the pumpkin is British, the recipe is classically Italian: alongside the pumpkin we have sage, almonds and pecorino, layered into a rich, warming vegetarian lasagne.
