Prawn Tortelli, Yellow Tomato, Franciacorta Wine Sauce
Hand-filled prawn tortelloni provides a salty seafood backdrop to our delicious Franciacorta wine and yellow datterini tomato sauce.
We have used Fratelli Berlucchi's "Brut 25", a sparkling Italian white. Fresh, and with hints of apple and blossom, the wine has been added to the sauce and then reduced, a process known as sfumato in Italy.
Ingredients: Fresh pasta (Wheat flour, Egg, Durum wheat flour, Salt), Prawns, Crayfish, Ricotta, Robiola cheese, Butter, Olive oil, White wine, Parsley, Garlic, Yellow tomatoes, Extra Virgin Olive Oil, Franciacorta Wine, Basil, Garlic, Dry Chilli Pepper, Salt, Lemon
