We serve these fresh parcels of pasta with a glug of garlic oil, infused with chilli. The garlic adds an earthy depth to the dish, enhancing the natural sweetness of the peas and shallots. - Remove the garlic oil from the fridge 15 minutes before cooking your pasta.
- Bring a large saucepan of water to the boil. Salt the water (around ½tbsp per litre).
- Cook the pasta in the boiling water for around 3 minutes.
- When the pasta has finished cooking, drain and plate up.
- Drizzle over the oil and sprinkle over the pangrattato.
- Enjoy immediately. Buon appetito!
