Known in parts of Italia as oro liquido, or ‘liquid gold’, olive oil is a treasured delicacy in the bel paese. In fact, in the southern region of Puglia, it is illegal to dig up and remove olive trees from the area, as many of them are ancient varietals and are protected by the law. Our signature olive oil is made with Coratina olives, traditionally grown in Puglia in the beautiful province of Bari. These olives have an intense flavour and slightly fruity, tangy notes which make a deliciously rich oil.
Extra virgin olive oil forms the base of many Italian pestos and sauces, but it is also common in regional culinary traditions to use olive oil, particularly the peppery extra virgin variety, to dress pasta dishes. Many recipes that are made with a tomato base are served up, particularly in the south, with a glug of local olive oil. Our head chef, Roberta, a native of Puglia, always has a bottle of extra virgin olive oil to hand, and uses it generously when cooking.
