A new restaurant worth getting excited about. With its townhouse setting, Moorish patterned walls, deco-style panels and homely amber glow, Norma brings the vibrant charm of Sicilia into the glamour of Fitzrovia.
About the dish: This is Chef Director Ben Tish’s signature pasta dish at Norma London. The sauce is typical of Sicilian cuisine - well-balanced, made using the finest, seasonal produce - from buttery aubergines grown in the outskirts of Catania to plump, fleshy San Marzano tomatoes and a scattering salty of Ricotta salata. Of the dish, Ben says: "I first tried this in Catania where it supposedly originates and it was delicious, so simple. It’s one of the few properly authentic dishes at Norma, I didn’t want to mess with it at all as it’s so good as it is."
