We've used Ginger Pig's best Longhorn shin to create a rich, slow-cooked ragù with red wine to bring out the best of this meaty flavour.
The distinctive Longhorn (it really does have long horns!) is the oldest British Beef breed, so you could say that it is upon these sturdy shoulders that Britain's reputation for a fine Sunday roast is borne. Strong but with a docile temperament, the cows were originally bred to plough the fields, but are now reared for their firm but relaxed meat with a fine, consistent marbling.
