Tortelloni with N'duja, Tomato Sauce & Pecorino
Something of a local hero, n'duja is a celebrated staple of Calabrian cuisine. Made with cuts of pork meat hailing from the rugged local landscape and flavoured with roasted local spicy peppers, this forms a soft sausage with a brilliantly warm and spicy taste.
The meat almost melts into the sauce as it cooks, resulting in a rich, spicy sauce which we pair with hand-made tortelloni containing a blend of ricotta and robiola cheese and rocket. This is topped with grated pecorino.
