Buttery Leccino olives, cultivated in the cool, rustic landscape of Tuscany, lend a delicate aspect to this sharing board, and are a tender companion to smooth cheese and cured meat.
Salame, ‘Nduja and the aforementioned Coppa Piacentina form the carne aspect of the dish. Though salame was once associated with peasantry, modern diners recognise the stunning properties of fragrant, peppery cured meats. Ribbons of delicate Coppa Piacentina further adorn this platter, the claret-hued carne affettata (sliced meat) reminiscent of Italy’s esteemed Calacatta marble.
