Trenette with Pea & Sundried Tomato Pesto (v., available gluten free)

Pesto is a traditional sauce that feels familiar to all, yet it is also ripe for innovation, and this piselli (pea) version truly makes a hero of a classic fresh summer taste.
Sweet and soft but with a nutty crunch from the pistachio nuts, there’s also the bright and peppery touch from the basil too.
The vibrant green colour is complemented with rich red and juicy sun-dried tomatoes, and soft, creamy ricotta cheese, and the pasta pairing allows the long, thin noodles of trenette (literally 'train tracks') to tangle and wrap up the soft, thick sauce.
