Trenette with Fresh Basil Pesto (v., gf available)
It is sometimes said that the proof of a fine talent is not in the mastery of complexity, but in doing the simple things brilliantly.
If that is so, this is our tribute to the true spirit of traditional green pesto - done the proper Genovese way. Basil, garlic, olive oil, pine nuts, pecorino and parmesan.
This we serve "alla Genovese", with green beans, potatoes and fresh trenette.
