With Italy’s enduring love affair with its carfciofi in mind, we simply could not present our taste of lo Stivale without showcasing this beloved ingredient. The ‘little shreds’ of fresh buffalo cheese serve as the namesake for the Stracciatella di Bufala, native to the province of Foggia. Perhaps best recognised as the deliciously light, creamy core of burrata, this mild cheese pairs delightfully with rich grilled aubergine and savoury taralli. Once a prized ritual offering to the Gods, taralli pugliesi is the deliciously moreish result when the trifecta of its namesake region’s most famous exports - wine, wheat and olives - are lovingly combined. Light yet addictive, these rustic, wheaty gems compliment the bright and fresh flavours that reside in this platter.
