Fettucine with Slow-Cooked Beef Shin Ragù & Parmesan (gf. avail.)

Fettucine fall into the family of what is known as “cutters”, a group of pastas that are long and ribbon-like. Other members of the cutters family include tagliolini and tagliatelle. Fettuccine, literally "little ribbons" in Italian, hails from Rome, where it has been loved for generations.

At about 1/4 inch in width, fettuccine ribbons are just a little bit narrower than tagliatelle & almost twice the size of linguine. Because it is a thicker pasta, fettuccine is traditionally served with heavier, meat-based sauces (and most certainly not cream-based sauces). We agree with tradition, as these strands are the perfect compliment for our slow-cooked beef shin ragù, which the fettuccine holds up beautifully.
