According to Pizza Pilgrims, Margherita is the 'heavyweight champ' of the pizzaverse. For our Conchiglie alla 'Margherita’, we’ve sourced sweet Datterini tomatoes, milky bocconcini mozzarella and the freshest basil because only the finest Italian ingredients can emulate this pizza classic.
Despite the ostensibly humble nature of this recipe, the choice of pasta couldn’t be more precise. Conchiglie, which derives from the Italian word ‘conchiglia’ meaning ‘seashell’, is perfect for thick, smooth sauces. Its concave interior will capture an incredibly generous mouthful, whilst its rough exterior enables the sauce to adhere to its surface, ensuring that no morsel is left uneaten.
To create the ultimate margherita experience, we suggest trying one of the mozzarella pearls inside a conchiglia before smothering your shell with the warm tomato ragù and finishing with a touch of hand-torn basil. Da Vinci said, ‘simplicity is the ultimate sophistication’ and it is this which epitomises our take on a delicious pizza classic.
Note: Please consume or freeze our pasta and sauces within 2 days of delivery.
- Bring a large saucepan of water to the boil. Salt the water (around ½tbsp per litre).
- Cook the pasta in boiling water for 2-3 minutes. Stir regularly to prevent sticking.
- Whilst the pasta cooks, put the sauce in a pan and add 2 tbsp (30ml) of the boiling pasta cooking water. Take care to ensure you squeeze all the sauce from the pouch. Gently heat until steaming.
- Lift the pasta out of the water and transfer to the sauce. Toss gently to coat and let it cook together for an extra minute.
- Sprinkle over the cheese and serve immediately. Buon appetito!
