Guanciale, from the Italian guancia - 'cheek' - is a type of cured pork cheek that hails from Umbria and Lazio, in central Italy. Rubbed with salt, sugar and spices, it's then smoked, which makes the difference with pancetta, giving the meat a stronger flavour and a more delicate texture.
We've paired Ginger Pig's pork cheek with a tomato and soft cheese sauce, with the smoked provola giving a mild but smokey flavour. This is a thick sauce paired with long bucatini tubes, so watch out if you're at dinner in a crisp white shirt.
