Nestled among the famous red-hued buildings and renaissance-era towers, you’ll find many eateries serving up authentic bolognese cuisine.
Often on the menu, are the alluring bright green Balazoni. In this exclusive Masterclass live from an Italian kitchen, our pasta artisan Livia will teach you all the skills needed to master this irresistible pasta. The enticing colour of balanzoni comes from spinach, which is added to a dough of super-refined “00 flour and eggs. The fillings, like the shape, are similar to those of tortelloni—typically ricotta and Parmigiano, ground salumi such as mortadella, and beaten egg.

Ingredients
- 300g “00” flour
- 3 large eggs
- 500g spinach boiled or steamed
- 200g ricotta
- 120g mortadella
- 70g parmesan
Tools: Pasta cutter wheel, pasta machine/rolling pin, wooden-board, knife, spoon, bowl for the filling.
