We'd like to invite you to an digital pasta masterclass, intimately hosted by our Head Chef Roberta from her own kitchen in Berkshire.
In this session, you'll learn to make two filled pasta shapes by hand in the authentic, artisan tradition passed down in Italy through the centuries. Roberta originates in Puglia, in the Italian South, where she learned how to make pasta from her nonna as a little girl.
You’ll start by discovering more about Italy and its regional traditions from Roberta and what Italian cooking means to her. You'll then learn how to make two more advanced filled pasta shapes: Tortelloni and Cappellacci, plus a delicious butter sauce with which to dress your pasta.
For the pasta:
2 large eggs + 200g white flour OR 200g semolina + 80ml water
For the filling:
250g ricotta (mozzarella, cream cheese or cottage cheese will work fine if you don't have ricotta)
Any fresh herbs, e.g. basil or parsley
Lemon zest (optional)
Salt & Pepper
For the sauce:
Sage or other fresh herbs (optional)
A rolling pin
Knife & Fork
If you cannot get the ingredients to make the filling or sauce, just let Roberta know what you have sitting in your fridge/pantry and she will guide you through an alternative using what you have available.
How it works: You will require access to Zoom video calling and a webcam. The day before the event you will be sent a Zoom link via email. If you have not received your Zoom link, please contact firstname.lastname@example.org.
Please note that, in order to preserve the intimacy of the event, we can welcome 1 person per ticket purchased to the digital event. We will have a maximum of 10 guests per digital event.
