Ah, Liguria… home to the Italian Riviera, beautiful fishing villages, stylish Portofino and the port city of Genova (once a Republic and maritime power in its own right). Liguria also happens to be the home of our founder, Alessandro, who, although now living in London, links his idea for Pasta Evangelists with wonderful memories of eating his nonna’s fresh gnocchi al pesto as a child. And, indeed, there is scarcely a food that better represents Liguria than pesto – pesto alla Genovese, in fact, which is one of the most beautiful, yet bastardised, sauces of Italy, if not the world.
In this masterclass, you’ll learn how to make real, authentic pesto alla Genovese, using only the fresh, real and utterly delicious ingredients that nonne across Liguria would agree to. You’ll also learn how to make fresh trofie, which are a pasta bianca (white, egg-free pasta) also from the region. At the end of the class, you’ll be able to take home your freshly-made pesto and pasta to enjoy together with amici e famiglia – just as the good people of Liguria would so do. You’ll also enjoy a complimentary glass of prosecco on arrival as well as a Liguria-inspired antipasti, containing, amongst other things, taggiasche olives, which are grown abundantly in the region.
