This week, we bring you these delectable tortelloni, whose striking onyx hue will inspire admiration for any dinner party guests that might stumble upon your abode. Our tortelloni are so-coloured because they have been infused with squid ink, which, whilst bold in appearance, imparts only subtle sea flavour; a mere whisper of the Italian seaside.
Our beautiful, locally-sourced crab, on the other hand, are robustly flavoursome and have been cherished by Italian chefs since the days of Ancient Rome. To do justice to this veritable tradition, we have selected the very best, locally-sourced crab, bringing you some of the freshest - and most delicious - crab available in the country, combining with mascarpone cheese to create a filling for our striking tortelloni that is at once light and creamy. We source our marscapone from Abbiategrasso, located southwest of Milan, where it has been produced since the 16th-century.
We serve our hand-crafted tortelloni with samphire - known poetically in Italian as asparagi di mare ("asparagus of the sea") - as well as a delicate chive butter to enhance the fresh seaside flavour of this show-stopping seafood dish.
