Tagliatelle Paglia e Fieno with Beef Shin Ragù & Parmesan (gf. avail)

Legend states that tagliatelle was invented in 1487 by the court chef of the House of Este after being inspired by Lucrezia d’Este’s wedding hairdo, which was styled in long, flat curls. Tagliatelle’s long ribbon-like shape is such a source of pride in Italy, that there is even a solid gold replica of tagliatelle in Bologna. Tagliatelle hail from the Emilia-Romagna and Marche regions of Italy, where they have been loved for generations. 

This week’s dish combines a vivid green spinach infused tagliatelle and traditional white tagliatelle in a dish called paglia e fieno, which translates to straw & hay. Complimenting the tagliatelle, our beef ragù is made by carefully browning pieces of marbled beef until they take on a deep, burnished hue. This is where all the flavour is. We then braise our caramelised beef in red wine and aromatics, as well as tomatoes. The finished sauce is a rich, intensely meaty ragù.
