Trenette hails from Genoa and Liguria. It is a narrow and flat pasta similar to linguine or fettuccine. Trenette are most commonly served with a traditional Genoese pesto sauce. However this week we have eschewed tradition and have paired our fresh pasta with a seeded supergreen pesto. Each mouthful contains broccoli, kale, broad beans, basil, and in place of pine nuts we have a mix of sunflower & pumpkin seeds. Making this dish not only vegetarian but nut free too.
As well as our nutritious and vitamin laden pesto the trenette is served with potatoes, green beans & courgetti which is our modern take on a traditional pesto alla Genovese.
