Ah, Puglia… home to (arguably) Italy’s most beautiful coastline, stretching for hundreds of kilometres along the Mediterranean. It’s also distinguished by its beautiful hill top towns and idyllic farmland, but, most importantly to our head sfoglina (pasta chef) Roberta d’Elia, who comes from the region, it is first and foremost a region of wonderful cuisine.
We'd like to invite you to enjoy a virtual Taste of Puglia, a digital pasta masterclass intimately hosted by Roberta from her own kitchen in Berkshire. You’ll start by discovering more about Puglia and its regional traditions from Roberta – who is Italian – and what it means to her. You'll learn how to make the classic pasta of the region: orecchiette, an egg-free pasta that is typically enjoyed with broccoli sauce, which you will also learn to make.
- 100g of semola
- 80ml of warm water
For the broccoli sauce:
- 500g broccoli
- Extra virgin olive oil (about 100ml)
- ¼ cup pine nuts
- ¼ cup almonds
- 40 grams of pecorino cheese
- A handful of fresh basil leaves
- Parmigiano Reggiano or other hard cheese (optional)
- A rolling pin (if you don’t have one, a bottle of wine would make a very authentic substitute!)

If you cannot get the ingredients to make the sauce, just let Roberta know what you have sitting in your fridge/pantry and she will guide you through an alternative Puglian sauce using what you have available.
How it works: You will require access to Zoom video calling and a webcam. The day before the event you will be sent a Zoom link via email. If you have not received your Zoom link, please contact firstname.lastname@example.org.
Please note that, in order to preserve the intimacy of the event, we can welcome 1 person per ticket purchased to the digital event. We will have a maximum of 10 guests per digital event.
