Something of a local hero, n'duja is a celebrated staple of Calabrian cuisine. Made with cuts of pork meat hailing from the rugged local landscape and flavoured with roasted local spicy peppers, this forms a soft sausage with a brilliantly warm and spicy taste.
In this dish, we therefore bring you a limited edition sauce, imbued with hot, meaty n'duja sausage, which we serve with fresh paccheri, a large, tubular-shaped pasta originating from Campania and Calabria. Paccheri literally translates to ‘slaps’, which is derived from the sound they make when eaten (or, in this case, more likely devoured). Enjoy with our garnish of pecorino cheese and be transported to il bel paese.
