Our gnocchi are feather-light, made using fresh, soft goat's cheese. We're pairing this with a pistachio pesto, made with toasted pistachios, extra virgin olive oil, a little garlic, and grated pecorino Romano.
Pistachio pesto is common in Sicily, where some of the best pistachio nuts are grown. Rich in minerals including potassium, phosphorus and calcium, and with a wonderfully distinct flavour, it's easy to see how they came to be known in Sicily as 'green gold'. Served with purple sprouting broccoli, a great source of folate and fibre, this dish is both comforting and full of goodness.
