Bigoli, Butternut Squash, Zucchine & Mixed Peppers with Feta (v.)

This refreshing and exciting dish is specially selected for warmer months, with light, soft fresh peppers & courgette tangling with long, firm strands of bigoli pasta.

Bigoli, similar to pici, are like a thick version of spaghetti, wrapping up the small chunks of vegetable and mingling well with the juices. The pasta is divided with strands of shredded butternut squash to ensure a lightness of flavour, and finished with tangy feta cheese selected in the true Roman style... Borrowed from the Greeks!
